A uniquely Singaporean dish - red snapper head braised in spicy curry with okra, tomatoes, and eggplant.

Curry Fish Head

Ingredients

  • 1 large red snapper head (about 1kg)
  • 200ml coconut milk
  • 400ml water
  • 200g okra (lady fingers)
  • 2 tomatoes, quartered
  • 1 eggplant, sliced
  • 2 tbsp tamarind paste
  • Curry leaves
  • For curry paste: 10 dried chilies, 8 shallots, 6 cloves garlic, 2 inches ginger, 2 stalks lemongrass, 1 inch turmeric, 2 tbsp fish curry powder

Preparation

    Clean fish head thoroughly, rub with salt and turmeric.

    Blend all curry paste ingredients until smooth.

    Heat oil, fry curry paste with curry leaves until fragrant (about 10 minutes).

    Add water and bring to boil.

    Add fish head and simmer for 15 minutes.

    Add coconut milk, eggplant, and okra.

    Add tomatoes and tamarind paste, simmer for another 10 minutes.

    Adjust seasoning with salt and sugar.

    Serve with steamed rice or crusty bread.

"Don't stir too much or the fish head will break apart. Let it simmer gently."
