Fried Rice

Ingredients

  • 3 cups day-old rice, cold
  • 3 eggs, beaten
  • 100g char siu (BBQ pork), diced
  • 100g prawns (optional)
  • 1 cup mixed vegetables (peas, corn, diced carrots)
  • 3 cloves garlic, minced
  • 2 tbsp light soy sauce
  • 1 tbsp dark soy sauce
  • 2 tbsp oil
  • Spring onions, chopped
  • White pepper to taste

Preparation

    Heat wok until smoking. Add oil and swirl to coat.

    Add beaten eggs, scramble quickly, and break into small pieces.

    Add garlic and fry until fragrant.

    Add char siu and prawns, stir-fry for 1 minute.

    Add cold rice, breaking up any clumps. Toss on high heat.

    Add vegetables and continue tossing.

  7. 7

    Season with soy sauces and white pepper.

  8. 8

    Add spring onions, toss once more, and serve.
