Ingredients

  • 400g yellow noodles
  • 200g prawns or chicken
  • 2 eggs
  • 100g bean sprouts
  • 2 potatoes, boiled and cubed
  • 1 tomato, cut into wedges
  • 4 tbsp tomato ketchup
  • 2 tbsp chili sauce
  • 2 tbsp sweet soy sauce (kecap manis)
  • 4 cloves garlic, minced
  • 2 green chilies, sliced
  • Lime wedges
  • Fried shallots

Preparation

    Heat oil in wok, fry garlic until golden.

    Add prawns or chicken, cook until done.

    Push to side, fry one egg sunny-side up, set aside.

    Add potatoes and tomato, stir-fry briefly.

    Add noodles and toss well.

    Add ketchup, chili sauce, and sweet soy sauce. Mix thoroughly.

    Add bean sprouts and green chilies, toss for 30 seconds.

    Plate noodles, top with fried egg.

    Serve with lime wedges and fried shallots.
